π Let's Talk 4th of July
There's something about the smell of a grill going, kids running around with sparklers, and a table full of food made by loving hands.
So I put together a little lineup featuring an appetizer, and a drink to wash it all down.
Simple ingredients, and big flavor.
π Appetizer: Sweet & Smoky Bacon-Wrapped Pineapple Bites
You'll need:
- 1 fresh pineapple, cut into 1-inch chunks
- 1 lb bacon, cut into thirds
- β cup brown sugar
- 1 tsp chili powder (optional, for a little kick)
- Toothpicks, soaked in water
How to make it:
- Wrap each pineapple chunk with a piece of bacon and secure with a toothpick.
- Roll in brown sugar (and chili powder, if using) until coated.
- Grill over medium heat, turning occasionally, until bacon is crispy β about 12β15 minutes.
Sweet, smoky, and gone before you can blink.
π Drink: Watermelon Mint Lemonade
You'll need:
- 3 cups fresh watermelon, cubed
- 1 cup fresh lemon juice
- ΒΌ cup honey or simple syrup
- A handful of fresh mint leaves
- Cold water & ice
How to make it:
- Blend watermelon until smooth; strain if you like it less pulpy.
- Combine watermelon juice, lemon juice, and honey in a pitcher.
- Add cold water to taste, toss in mint leaves, and stir.
- Serve over ice with a lemon wheel and a sprig of mint on top.
Cool, refreshing, and just sweet enough.
