I used to plan meals around what sounded fun to make. Now I catch myself thinking ahead — what can I prep tonight so tomorrow is easier, what will actually get eaten, what can I make once and stretch across a few busy days? It's a whole new kind of cooking, and honestly, I kind of love it.

So with back to school season here, and a nursery slowly coming together in my own house, I wanted to put together something for anyone juggling a lot right now: real, simple recipes for breakfast, lunch, and dinner that you can actually pull off on a weeknight.

🍎 Why Back to School Meals Matter (and Why They Don't Have to Be Complicated)

Between packing lunches, planning dinners, and still trying to have a life, back to school season can wear a family down fast. You don't need a Pinterest board and four hours to feed your people well. You need a handful of recipes you can make on repeat, with ingredients you already have, that everybody will actually eat.

That's what these three are: a make-ahead breakfast, a lunchbox favorite, and a weeknight dinner for your whole family.

🥣 Breakfast: Overnight Peanut Butter Banana Oats

Mornings move fast once school is back in session. This one gets made the night before, so all you're doing at 7 a.m. is grabbing it out of the fridge.

You'll need:

  • 1 cup old fashioned oats
  • 1 cup milk (dairy or your favorite alternative)
  • 1 ripe banana, mashed
  • 2 tbsp peanut butter
  • 1 tbsp honey or maple syrup
  • ½ tsp cinnamon
  • Pinch of salt

How to make it:

  1. Stir all ingredients together in a jar or container with a lid.
  2. Cover and refrigerate overnight, or at least 4 hours.
  3. In the morning, give it a good stir. Add a splash of milk if it's thicker than you'd like, and top with extra banana slices or a drizzle of peanut butter.

Make a batch of four or five on Sunday night, and breakfast is covered through the week.

🥪 Lunch: Turkey and Cheese Pinwheel Roll-Ups

These come together in minutes, hold up well in a lunchbox, and kids tend to actually eat them — which is really all any of us are asking for.

You'll need:

  • 4 large flour tortillas
  • 8 oz cream cheese, softened
  • 8 slices deli turkey
  • 4 slices cheddar or provolone cheese
  • ½ cup shredded lettuce or spinach (optional)
  • 1 tbsp ranch seasoning or Italian seasoning (optional, for extra flavor)

How to make it:

  1. Spread a thin, even layer of cream cheese over each tortilla, all the way to the edges.
  2. If using, sprinkle seasoning evenly over the cream cheese.
  3. Layer turkey and cheese on top, then add lettuce or spinach if using.
  4. Roll each tortilla up tightly and wrap in plastic wrap.
  5. Refrigerate for at least 30 minutes so they hold their shape, then slice into pinwheels.

Pack three or four pinwheels per lunchbox with some fruit on the side, and you've got a lunch that travels well and doesn't come home half eaten.

🍗 Dinner: One-Pan Sheet Pan Chicken and Veggies

After a long day, the last thing anyone wants is a sink full of dishes. This one is a single pan, minimal cleanup, and on the table in about 35 minutes.

You'll need:

  • 4 boneless chicken thighs or breasts
  • 2 cups baby potatoes, halved
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

How to make it:

  1. Preheat oven to 400°F and line a sheet pan with foil or parchment.
  2. Toss potatoes and carrots with half the olive oil and seasonings, and spread on the pan. Roast for 15 minutes.
  3. Push the vegetables to one side, add chicken and broccoli to the pan, and drizzle everything with the remaining olive oil and seasonings.
  4. Roast for another 20 to 25 minutes, until chicken reaches 165°F internally and vegetables are tender.
  5. Let rest 5 minutes before serving.

One pan, one clean up, and a dinner your whole family can sit down to together.
