They Grow Up So Fast — Fall Recipes from a Brand New Mama
Our newest little one arrived October 1st! A few words from a brand new mama, plus cozy fall recipes for breakfast (pumpkin spice pancakes), lunch (roasted butternut squash soup), and dinner (sheet pan sausage, sweet potatoes & apples), and how to get your seasonal orders in.
Hey there, friend!
I have some sweet news to share: on October 1st, we welcomed our baby into the world. 💛
The last couple of weeks have been a blur of tiny socks, late-night feedings, and more love than I knew my heart could hold. And let me tell you, there is so much I'm learning already. How to do just about everything one-handed. How a five-minute nap can feel like a vacation. How to tell the "I'm hungry" cry from the "just hold me" cry (I'm still working on that one).
And then there's that saying everybody kept telling me while I was pregnant: "They grow up so fast." I'd smile and nod, but I didn't really get it. Now I do. It's only been a few days, and I already catch myself staring at those little fingers and toes, trying to memorize every single detail, because I can already see them changing. Every older mama who ever told me to soak it all in: you were right.
So this fall, I'm slowing down, holding close, and leaning into the season. And just like always, I wanted to share a few cozy recipes from my kitchen to yours.
Grab your coffee (or a warm mug of cider) and let's get into it.
🍂 Getting Ready for Fall
Fall has always been my favorite time in the kitchen: brown sugar, cinnamon, apples, pumpkin, warm spice. This year, it feels even more special. It's a season about home, about gathering your people close, and about the kind of comfort food that makes a house feel full.
With a newborn in the house, my cooking has gotten a whole lot simpler. These recipes are easy, mostly hands-off, and big on fall flavor, so whether you're chasing toddlers, juggling a busy work week, or just craving something cozy, they'll fit right into your routine.
🥞 Breakfast: Pumpkin Spice Pancakes
The whole house smells like a pumpkin patch while these cook. Make a double batch and freeze the extras for busy mornings.
You'll need:
- 1 ½ cups all-purpose flour
- 2 tbsp brown sugar
- 2 tsp baking powder
- 1 ½ tsp pumpkin pie spice
- ½ tsp salt
- 1 cup milk
- ¾ cup pumpkin puree
- 1 large egg
- 2 tbsp melted butter, plus more for the pan
- 1 tsp vanilla
How to make it:
- Whisk the flour, brown sugar, baking powder, pumpkin pie spice, and salt together in a large bowl.
- In another bowl, whisk the milk, pumpkin, egg, melted butter, and vanilla.
- Pour the wet ingredients into the dry and stir until just combined. A few lumps are perfect.
- Heat a buttered skillet or griddle over medium heat and pour about ¼ cup of batter per pancake.
- Cook until bubbles form on top and the edges look set, about 2 to 3 minutes, then flip and cook 1 to 2 minutes more.
- Serve warm with maple syrup, a pat of butter, and a sprinkle of cinnamon.
🥣 Lunch: Roasted Butternut Squash Soup
This is a big hug in a bowl. Roast everything on one pan, blend, and lunch is ready for days. It also freezes beautifully, which this new mama appreciates more than words can say.
You'll need:
- 1 medium butternut squash, peeled, seeded, and cubed (or a bag of pre-cut squash)
- 1 small onion, quartered
- 2 carrots, chopped
- 1 apple, cored and quartered
- 3 cloves garlic
- 2 tbsp olive oil
- 1 tbsp brown sugar
- ½ tsp cinnamon
- Salt and pepper to taste
- 4 cups chicken or vegetable broth
- ½ cup heavy cream or coconut milk
How to make it:
- Preheat oven to 400°F.
- Toss the squash, onion, carrots, apple, and garlic with olive oil, brown sugar, cinnamon, salt, and pepper, and spread on a sheet pan.
- Roast 30 to 35 minutes, until everything is tender and caramelized around the edges.
- Add the roasted vegetables and broth to a large pot and blend with an immersion blender (or in batches in a regular blender) until smooth.
- Stir in the cream, warm it through over low heat, and season to taste.
- Top with a swirl of cream, toasted pumpkin seeds, and a piece of crusty bread on the side.
🍎 Dinner: Sheet Pan Sausage with Sweet Potatoes & Apples
One pan, about 10 minutes of prep, and a sweet and savory dinner the whole family will love. This one has been on repeat in our house.
You'll need:
- 1 lb smoked sausage or kielbasa, sliced into coins
- 2 medium sweet potatoes, cubed
- 2 apples, cored and cut into chunks
- 1 small red onion, cut into wedges
- 2 cups Brussels sprouts, halved
- 3 tbsp olive oil
- 2 tbsp maple syrup or brown sugar
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp dried thyme
- Salt and pepper to taste
How to make it:
- Preheat oven to 425°F and line a large sheet pan with parchment or foil.
- Toss the sweet potatoes and Brussels sprouts with half the olive oil and seasonings, spread on the pan, and roast for 15 minutes.
- Add the sausage, apples, and onion to the pan. Drizzle with the remaining oil and the maple syrup, and toss everything together.
- Roast another 15 to 20 minutes, until the sweet potatoes are tender and the sausage is browned.
- Serve as is, or over rice or quinoa for an extra hearty meal.
One pan, easy cleanup, and more time at the table with the people you love.
