Brown Butter Pumpkin Spice Cookies — Our Coziest Fall Recipe

ChristinaOctober 18, 2026

Soft, chewy pumpkin spice cookies made with brown butter and plenty of brown sugar, then rolled in cinnamon sugar. Our favorite fall cookie recipe from the Brown Sugar Delights kitchen in Lynchburg, VA.

Hey there, friend!

If fall had a smell, it would be this cookie. Brown butter, brown sugar, pumpkin, and warm spice all baked into one soft, chewy bite and rolled in cinnamon sugar. It's the cookie I make when I want the whole house to feel like October.

Most pumpkin cookies come out puffy and cake-like. Not these. The secret is two little tricks: browning the butter for that toasty, nutty depth, and blotting the pumpkin so you get all the flavor without the extra moisture. The result is a chewy, crackly-topped cookie that tastes like a pumpkin spice latte in cookie form.

Grab your apron (and maybe a mug of cider) and let's get into it.

🎃 Brown Butter Pumpkin Spice Cookies

Makes: about 20 cookies
Prep: 20 minutes + 1 hour chill
Bake: 10 to 12 minutes at 350°F

You'll need:

  • ¾ cup (1 ½ sticks) unsalted butter
  • ½ cup pumpkin puree (not pumpkin pie filling)
  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1 cup packed dark brown sugar
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 2 tsp vanilla extract

For rolling:

  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon

Optional finish: a drizzle of maple glaze (1 cup powdered sugar + 2 tbsp maple syrup + 1 tbsp milk) or ½ cup white chocolate chips stirred into the dough.

How to make it:

  1. Brown the butter. Melt the butter in a light-colored saucepan over medium heat, swirling often. It will foam, then turn golden with little brown bits on the bottom and smell nutty, about 5 to 7 minutes. Pour it into a large bowl (brown bits and all) and let it cool for 15 minutes.
  2. Blot the pumpkin. Spread the pumpkin puree on a double layer of paper towels and press another towel on top. Let it sit a few minutes to soak up the extra moisture. This is the key to a chewy cookie instead of a cakey one.
  3. Mix the dry ingredients. In a separate bowl, whisk together the flour, baking soda, salt, pumpkin pie spice, and cinnamon.
  4. Mix the wet ingredients. Whisk the brown sugar and granulated sugar into the cooled brown butter until smooth. Add the blotted pumpkin, egg yolk, and vanilla and whisk until glossy.
  5. Bring it together. Stir the dry ingredients into the wet until just combined. The dough will be soft. Cover and chill for at least 1 hour (or up to 2 days).
  6. Roll and bake. Preheat the oven to 350°F and line baking sheets with parchment. Mix the cinnamon sugar for rolling. Scoop the dough into 1 ½ tablespoon balls, roll each one in cinnamon sugar, and place 2 inches apart.
  7. Bake for 10 to 12 minutes, until the edges are set and the centers still look a little soft. Let them cool on the pan for 5 minutes, then move to a wire rack.
  8. Finish (optional). Once cool, drizzle with maple glaze if you're feeling fancy.

🍂 Christina's Tips

  • Use dark brown sugar. It gives the deepest caramel flavor and the chewiest texture. (You know we had to.)
  • Don't skip the chill. Cold dough spreads less and bakes up thicker.
  • Pull them early. They'll look underdone in the middle. They finish setting on the pan.
  • Make ahead. Rolled dough balls freeze beautifully. Bake straight from frozen and add 1 to 2 minutes.
  • Storage. Keep cookies in an airtight container at room temperature for up to 4 days.

❓ Quick Answers

How do you keep pumpkin cookies from being cakey? Blot the pumpkin puree with paper towels to remove extra moisture, use brown butter and an egg yolk instead of a whole egg, and chill the dough before baking. That combination gives a chewy pumpkin cookie instead of a cakey one.

Can I use pumpkin pie filling instead of pumpkin puree? No. Pumpkin pie filling already contains sugar and spices, which throws off the recipe. Use plain canned pumpkin puree.

Can I make pumpkin spice cookie dough ahead of time? Yes. The dough keeps in the refrigerator for up to 2 days, and rolled dough balls can be frozen for up to 3 months and baked straight from frozen.
